Cider and Seed Quick Bread

Soup always needs a dipper, and whats better then a bread that comes together in 10 minutes. Pretty much nothing! This recipe came out of my need for a side item when guests were coming over. I'm so glad this "on a whim" recipe worked out. 

-2 large eggs

-2 Tbs maple syrup

-1/4 Cup Olive oil

-1/2 Tbs yeast

Combine these ingredients and mix well in a large bowl. Add in:

-1 1/2 Cups gluten free baking mix (I use Pamela's Products), or you could use a whole grain pancake mix. 

-1/2 Cup buckwheat flour

-1 tsp salt

-1/2 bottle of hard or regular cider ( I used Crispins Hard Pear Cider, but apple would be even better)

Mix well and pour into a prepared quick bread pan. Sprinkle with roasted/salted sunflower seeds and pepitas. Bake at 350 for 35-45 minutes or until browned and cooked through!

Quick Egg Dinner

When your rushing home starving and can't fathom waiting more than 10 minutes for food, this will be your new go to! Quick, easy, protein and healthy fat filled deliciousness 

 

- 2 eggs in a bowl, salt and pepper, microwave for 1 minute stir then another minute longer

 

- top with 1/2 avocado squirted with lime juice and garlic powder

 

- green lettuce mix

 

- 1 Tbs Italian dressing

 

- dash of nutritional yeast

Raw Peanut Butter and Chia Tart

TGIF! Weekends are made for no hassle sweet treats. This raw tart fits the bill. Make it in individual serving by using tart shells or a muffin tin, or make one big one with a brownie pan! If you've got littles at home this is something they can definitely help with. Lightly sweet, and oh so perfect. Enjoy!

Crust-

-1 1/2 cups oats

-4 dates (if you don't have dates use 1/4 cup raisins)

-1/4 cup water

-Dash salt

-2-3 Tbs almond butter

-Blend together in a food processor. Press into one 8x8 brownie pan or 4 individual tart pans. Set aside

Filling-

-1 cup low fat plain yogurt (my favorite is Snowville 2%)

-Heaping 1/4 cup natural peanut butter

-2 Tbs honey

-2 Tbs chia seeds

-Dash cinnamon 

Blend together well. Top the crusts with yogurt mixture. Refrigerate for 30-60 minutes. Top with your favorite fruit!
