Chicken Tenders

December 03, 2016 by Kelli Leingang-Pitrone in Dinner, Gluten Free

A kid and adult favorite for dinner tonight..... chicken tenders. Homemade baked chicken tenders, even better. Make, bake, freeze extras, and have them on hand to pop in the oven instead of those those not so great for you ones in the freezer section happy dance in honor of homemade food for you and your littles

2.5 lbsWhole Foods 365 organic chicken breasts thawed and sliced into tender shapes. Long and skinny

Full fat buttermilk. Place tenders in bowl with 2 cups buttermilk, salt, pepper, fetlock powder, 1/4 cup buffalo sauce

Let sit in marinade for the afternoon or for an hour

Place 2 cups tortilla chips, 1 cup corn Chex, 1/2 cup shreddedParmesan cheese, 1 tsp pepper, and 1 tsp garlic powder into a resealable bag and crunch up to super small pieces

Take chicken tenders, place in bag of crushed chips and cheese, place on aluminum foil lined cookie sheet

Bake at 375 for 25-30 minutes

To reheat extras turn oven to 375 and bake on cookie sheet just like you'd do the normal freezer kind. Bake for 10-15 mins or until heated through.
