Shepherds Pie

This is good like realllll good. I’m down for Shepherds Pie any day any time, but its particularly good for St. Pattys Day. Minimal inside ingredients and broccoli smooshed into the potato topping to give it that green. Hue. Yes Please!

-1/2 onion chopped and placed in a dry oven safe skillet

-2 garlic cloves chopped thrown in with the onion

-1 lb ground beef cooked in an oven safe skillet

Cook together until meat is done. Drain off excessive amounts of grease leaving a little bit in there. Add 1/4 cup Worcestershire sauce. Add in 1/2 bag of frozen peas and carrots. Throw the whole thing in if you want it super veggie.


-Boil 5 large potatoes with skins on. Preferably potatoes that have thinner skins.

-For the last 5-8 minutes of cooking add in a head of broccoli

Drain it all when the potatoes are done. Add 1 Tbs butter, 1/2 cup milk, salt, pepper. Smoosh it. Top the meat mixture with the potatoes. Place it in the oven to heat through!


Quinoa Bowl with Tahini Dressing

I can’t take credit for this beautiful bowl butttt my remake version is below. It’s just so beautiful isn’t it! I think of this meal often. It’s from an awesome cafe in Canada. Mouth watering to say the least. To make 4 servings:

  • 6 cups of cooked quinoa

  • 2 cans chickpeas drained

  • fresh spinach and kale- quick sautéed in olive oil

  • slice a sweet potato and roast in the oven for 45 minutes. Do a lot of them so you have leftovers

  • layer it up. Quinoa, chickpeas, sautéed greens, sweet potatoes, top with salted pepitas.

Dressing—> 1/2 cup tahini, 1/4 cup maple syrup, 2 tbs cider vinegar, dash of garlic powder. Up or down any of the ingredients as you like them! Top the bowl with this!

Broccoli Mac and Cheese

Boxed Mac and cheese has got nothin on this. Like OMG. Its shockingly easy to make your own cheese sauce at home, and gluten free at that! The combo of brown rice rotini, mixed cheese sauce, and broccoli. Yum! My toddler had two helpings. NEVER HAPPENS!

Sauce:

Saute 2 Tbs butter with 2 Tbs gluten free flour. It will look weird and like you did something wrong

Pour in 2 cups of milk and whisk well, like really well

Let it bubble and start to thicken

Keep stirring and add in some salt, pepper, and 2 tsp garlic powder

Add 1 handful mozzarella cheese and 1 handful mild cheddar cheese

Whisk until cheese is melted and its all combined!


Noodles:

Cook I package of rotini noodles

During the last 5 of cooking add in 1 head of fresh broccoli cut into florets

Drain and combine into the pan with the cheese sauce

Give it a stir to get it all yummy and mixed up

Salt and pepper more if needed!
