"Northstar" Veggie Burger

Northstar Veggie Burgers. They're perfect. Sheer perfection. My mouth drools just thinking about them. I've been on a quest to make them at home and this is the closest I've come. To make them really legit you could even make them bigger than the size I did. I did these inside on a well oiled griddle pan because nobody likes it when their burgers fall down into the black abyss of the outdoor grill. The extras freeze perfectly and reheat with 1 minute in the microwave. I froze mine in an old yogurt tub separating each burg with a little piece of parchment paper.



-Heaping 1 cup of brown rice cooked with 2 cups water, 2 cloves garlic, 1/4 cup raising, 1 tbs fresh rosemary. Cook until rice is tender


-2 cups sliced beets roasted with skins on


-1 drained can of black beans


-1 1/2 cups rolled oats


- 1 Tbs ground cumin


-1 Tbs garlic powder


-1 tsp red pepper flakes


-Salt and pepper


-2 large eggs


Combine all ingredients well with potato masher or a food processor. Let sit in the fridge for a few hours. Scoop into whatever shape you prefer, I used a biscuit cutter as a mold to make them uniform in size. Cook on a pan or indoor griddle until well browned on each side. This recipes makes 14 ish good sized veggies burgers. I froze the extras in tupperware separated with parchment so they didn't stick to one another!

Onion and Broccoli Enchiladas

Vegetarian dinner on point👍🏼 Onion and Broccoli Enchiladas. These babies came from the need to use up a ton of fresh broccoli. Who knew broccoli is perfect when combined with beans and onions. This is one of my favorites to have throughout the work week and is perfect on top of a salad. Gluten free and can easily be made vegan to please everyone! 

 

 

2 cups fresh broccoli florets chopped

 

1 small onion chopped

 

olive oil to sauté

 

salt and pepper

 

Sauté until soft and combine with:

 

1 can vegetarian refried beans

 

1 tsp garlic powder

 

1 tsp cumin

-------------

corn tortillas
Large can enchilada sauce
sharp cheddar or cotija cheese
fresh cilantro

--------------

 

Pour some enchilada sauce in the bottom of a 9x13, set aside. Fill and roll tortillas and place in pan on top of enchilada sauce. Pour remaining sauce on top, sprinkle with cheese if you want, bake at 350 covered for 15 minutes and 15 remaining minutes uncovered. Enjoy!

Banana Nut Bites

Snacks, snacks, snacks! Such an important part of my day. Mixing protein, fiber, healthy fats, and a little bit of sweet is the perfect combo. Keeps your blood sugars consistent and it doesn't hurt that these little bites are DELICIOUS! These are like mini frozen candy bars. Can't. Get. Enough....

Slice 1 banana on an angle to make larger slices

Spread with your favorite nut butter 

Top with super dark chocolate and chia seeds. My favorite is Endangered Species 88% dark chocolate
