National Peanut Butter Day- Peanut Butter Oatmeal

Every day is peanut butter day for me! It is my all time favorite food. Favorite brand = Kroger creamy natural. Nothing fancy, but perfect. My favorite way to eat it? On top of oatmeal. Every day starts off with a bowl of  this peanut butter goodness. Yum:)

-1/4 Cup rolled oats

-2 tsp chia seeds

-Dash cinnamon

-Enough water to cover- cook in microwave for 1 minute 30 seconds

-Top with a handful of raspberries, blueberries, and 1/2 bananas

-1-2 Tbs peanut butter

Makes one serving

Citrus Fruit Salad

Fruit can be expensive during the cold winter months! My solution is to stick with more citrus. Good for the wallet as well as the body. Yum. To make supremes, fancy word for segments of the citrus fruit, remove the outer peel by slicing down the sides of the fruit. Cut into each wedge on both sides releasing the segment from the membrane. 

-1 large pink grapefruit cut into supremes 

-2 large navel oranges cut into supremes

-1/2 cup blueberries

-1/2 cup raspberries

-juice of 1 lime

Combine all ingredients. Chill. Enjoy!
