BLT Stacks

 I get a lot of requests for lower carb recipes ideas, and this is definitely one of them! Place slices of bacon on a lined cookie sheet and bake at 350 for 15-20 minutes or until bacon is done to your liking. Place cooked bacon on paper towels to drain. Before stacking the BLT's slice the tomatoes, lay on paper towels and lightly salt them to pull out some of the moisture so the stacks aren't soggy! The tomatoes and lettuce are from Patchwork farms!

-Sliced large tomato 

-1-2 tsp light mayonnaise 

- Lettuce 

-Cooked bacon on top (3-4 half slices)

Clean Your Fridge Frittata

If you've got a fridge full of ingredients that you need to use up, this is the perfect recipe! A frittata is a great high protein meal that can be tailored to your families likes and dislikes!  This was a major hodge podge of ingredients but it turned out great!

In a large skillet, I used an oven safe cast iron skillet, add:

-2 tbs olive oil

-1/2 onion chopped

-1/2 green pepper chopped

-1 jalapeño chopped

-1 handful of chopped cherry tomatoes

-1 handful green beans

-1 small yellow squash

-1 ear of corn; kernels removed

-1/2 cup cooked sliced potatoes (these were leftover baked potato wedges from a previous dinner)

-1/2 cup cooked brown rice

-1/2 tsp salt

-1 tsp pepper

Saute all of this for 5-8 minutes or until browned. Whisk  8 small eggs (or 4 large to extra large eggs) in a bowl and pour over top of the vegetables. Stir the eggs into the veggies to mix.Top with any strong cheese you like. I used Parmesan. Place in a 400 degree oven until browned, 10-12 minutes. Serve in wedges with a salad. As usual this is just an idea of what to add to the pan. Add whatever leftovers you have!

Herbed Chickpea Burgers

 Chickpeas are a great protein source and give a great meaty texture to these veggie burgers. Making your own veggies burgers not only keeps your grocery bill down, it allows you to change the flavor in accordance to what your family likes. This recipe is just a template to follow and switch up however you like. Some good additions would be fresh basil and sun dried tomatoes. You could also add in cilantro, cumin, and top with salsa to make a mexican style burger! The possibilities are endless!

Ingredients:

-2 cups cooked chickpeas

-1 cup cooked short grain brown rice (or long grain, just well cooked)

-5 green onions chopped

-1-2 Tbs fresh Thyme and Oregano chopped

-1 fresh Jalapeño chopped finely

- 1/2 large avocado

-Juice of 1/2 a lemon, top avocado chunks with this to keep from browning

-1 tsp dried rosemary

-1 tsp dried garlic powder

-1 tsp dried mustard

-1 tsp salt

-2 tbs nutritional yeast

Combine all ingredients and smoosh with a potato masher. Divide into six patties with an ice cream scoop. Flatten and brown each burger in a heated pan of olive oil. Place on a prepped cookie sheet and bake all browned veggie burgers in a 350 degree oven for 25 minutes!
